Keto Smothered Chicken

Ingredients

  • 4 (8-ounce) skin-on, bone-in chicken thighs
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 4 slices bacon, cut into ½-inch pieces
  • ⅓ cup low-sodium chicken broth
  • 4 ounces sliced mushrooms
  • ¼ cup heavy whipping cream
  • 2 green onions, white and green parts separated and sliced

How to Make Keto Smothered Chicken

Step 1: Preheat the Oven

Preheat your oven to 200°C (about 400°F).

Step 2: Season the Chicken

Pat the chicken thighs dry with paper towels. Season both sides with paprika, salt, and black pepper, making sure the skin is evenly coated.

Step 3: Cook the Bacon

Place a large skillet over medium-high heat. Add the chopped bacon and cook for 4 to 5 minutes until crispy. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate. Drain excess grease from the skillet, leaving a small amount for flavor.

Step 4: Brown the Chicken

In the same skillet, place the chicken thighs skin-side down. Cook for 3 to 4 minutes per side until golden brown. You are not fully cooking the chicken at this stage, just creating a nice crust.

Step 5: Bake the Chicken

Transfer the browned chicken thighs to a baking dish. Bake in the preheated oven for 20 to 25 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F.

Remove from the oven and loosely cover with foil to keep warm.

Step 6: Prepare the Creamy Sauce

Return the skillet to medium-high heat. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Add the sliced mushrooms and cook for 3 to 4 minutes until softened.

Stir in the heavy whipping cream and let the sauce simmer until slightly thickened.

Step 7: Smother and Serve

Return the cooked chicken thighs to the skillet. Spoon the creamy mushroom sauce over the top. Sprinkle with the crispy bacon and sliced green onions before serving.
